Chicken is the most popular poultry product in Canada and accounts for 86% of all poultry meat produced by Canadian farmers. Chicken breast contains less fat than the dark meat found in legs and thighs. Most of the fat is actually found in the skin. To reduce some of the fat you eat, remove the skin before cooking the chicken. Or you can take the skin off before eating cooked chicken.
